I had a hankering last week for jalapeño poppers. But my go-to popper stop, Sonic, is miles and miles (45 of them, actually) away. And no craving will get me to drive that far at $4.35 a gallon. So I took matters into my own hands. Lucky for me, my wallet and my waistline, the girls over at Hungry Girl had a solution—a low-cal recipe.
With only five necessary ingredients (fresh jalapeños, fat-free cream cheese, cheddar cheese, Fiber One cereal and Egg Beaters), this recipe was a cinch to add to my grocery list and make. I was a little nervous about the Fiber One. The cereal comes in two sealed bags—which to me means that the company is aware that one big bag might go stale because people aren't going to be wolfing the stuff down. But have no fear, these poppies are awesome!
The snack is easy to make. You simply cut the jalapeños in half lengthwise, remove the innards, and stuff with a mixture of the cream cheese and shredded cheddar. Then, you dip them in Egg Beaters, roll them in the Fiber One (I added a little of the optional salt and pepper), throw them on a lightly greased cookie sheet and bake for 25 to 30 minutes.
All in all, this is a tasty treat and easy to make. My guy really enjoyed them, and he's usually a tough sell. And my sneaky pug tried extremely hard to enjoy them as soon as I turned my back. You can eat half the dish (5 poppers) for only 124 calories! —
